In this episode, we’ll be visiting Thai’s Khao Man Gai & Noodles with Chef Bob Somsith who will, in fact, be taking his first ever bus ride. Chef Bob is the owner of Lao’d Bar in East Austin located near the Decker Pickup Zone. When he isn’t serving up award-winning dishes at his own restaurant, one of his favorite spots in Austin to eat is P Thai’s Khao Man Gai & Noodles.  

P Thai’s Khao Man Gai & Noodles is owned and operated by Chef Thai Changthong. Chef Thai was born in Bankok and has lived in Austin for the past 30 years. His mother’s family were Chinese-born immigrants, so his culinary influences include Thai and Thai-Chinese cuisine. Since moving to the U.S., Chef Thai always wanted honor his mother and home city by bringing his family’s Thai-Chinese style dishes to Austin. He began by opening a food stall nestled within the Hong Kong Supermarket in North Austin serving up his mother’s recipe for khao man gai (a Thai-style of Hainanese chicken rice), using whole chickens to make the chicken fat rice and broth. His beloved khao man gai and Thai style street food quickly gained a local following, and in April 2024, Chef Thai officially relocated and opened his brick-and-mortar restaurant, P Thai’s Khao Man Gai & Noodles.

His new restaurant specializes in Thai-Chinese cuisine and his mother’s treasured Khao Man Gai remains their signature dish. Thanks to the larger full-on restaurant space, Chef Thai has been able to expand his menu with broader offerings, including dishes inspired by Bangkok’s Chinatown neighborhoods. He remains devoted to using the freshest ingredients, providing an authentic dining experience, and exploring new techniques to craft unique and delicious specials, ensuring each dish is a masterpiece.
